Terra Nobile - Farine & Co.
In addition to ancient grains, Terra Nobile also produces spelled, from which finished products are obtained such as pearl spelled, spelled flour and puls di farro (considered the dish of the Italic populations), chickpeas and chickpea flour, native Abruzzo beans and pasta in various shapes, obtained from Senatore Cappelli wholemeal semolina. Quality and goodness, a right combination that brings man back to love and respect his land, his noble land, which for us is a Noble Land (Terra Nobile)! "Take a step back to move forward" is what we said a few years ago, when in the company, starting from the recovery of seeds of ancient and native Abruzzo grains, we wanted to restore a supply chain that would become an expression of our territory, to return to a truly healthy diet, full of taste and digestibility.
For over a century, our family is the custodian of traditions and knowledge of the cereal world, and returning to the cultivation of ancient varieties such as Solina, Frassinese, Saragolla and Senatore Cappelli, has meant revising or in some cases abandoning many of the modern processing techniques. In fact, the fertilization of our land takes place with green manure of leguminous plants, following the “agricultural rotation” and the “minimum tillage”, and without resorting to synthetic chemical fertilizers and above all to herbicides.
We have seen that, in the months of May and June, when our hills turn golden and the ears sway like in a sea, the red poppies are once again the protagonists of a landscape, which seemed now forgotten. It is no coincidence, then, that the poppy and the Latin phrase "Sicut Natura Gerit", that is "how nature creates", are the logo and slogan of Terra Nobile!
After the harvest we proceed to the Processing, always in the company, in a storage area suitably equipped for cleaning and storage, while the Trasformation continues in our laboratory, where a natural stone mill produces Type 1, 2 and Wholemeal flours. , that is to say not particularly refined, with a higher fiber content and the total conservation of the wheat germ. The latter, in fact, contains the most precious part of the grain, rich in antioxidants, vitamins, polyphenols and essential oils, which restore the flavors of the past to the palate.
