Honeydew honey from Abruzzo - 500 Gr

The forest honeydew is a honey that unlike the others, does not derive from the nectar of a flower, but from the secretions of an insect that lives on different plant species, the Metcalfa Pruinosa. The bees collect the sugary secretions and transform them into a substance rich in enzymes, because they are the result of a double processing: that of the honeydew produced by metcalfa and that of the bee.

Honeydew is characterized by its brown and very dense appearance, due to low humidity and by its decidedly less sweet flavor than nectar honeys, reminiscent of malt and caramel.

OUR MELATA HONEY IS COLLECTED FROM HIVE LOCATED IN ABRUZZO.

Color: dark amber to black Tendency to crystallization: very low

Odor: medium intensity; vegetable / fruity, yeast, tomato sauce, cooked fruit, of jam.

Aroma: similar to the smell, reminiscent of dried fruit and molasses; beets, dates; persistent

Taste: not very sweet, not perceptible sour and bitter

Uses: often appreciated by those who say they do not like honey, it is used to flavor milk and dairy products. Thanks to its particular consistency and resistance to cooking, it is suitable for replacing caramel in recipes that require it.
