Organic Red Dop - Tullum
We rely exclusively on spontaneous fermentation for all our Premium organic wines: this is the result of the natural selection of the so-called "indigenous yeasts", responsible for the alcoholic fermentation of wine. The different species of yeast in the fermenting must resist the progressively accumulated ethanol in different ways.
The purity of this viticultural work of art is completed by very few interventions in the cellar and no filtration. An exceptional Red from organic grapes, spontaneous fermentation, without filtration.
Vineyard location area: Municipality of Tollo
Grapes: As required by the specification, from certified organic vineyards grown on hilly land in the municipality of Tollo
Harvest period: Mid October (based on chemical analysis and grape tasting)
Vinification: After pressing, the grapes remain in contact with the skins in concrete tanks for a long period of maceration. The fermentation of the crushed grapes takes place by spontaneous indigenous yeasts naturally present on the berries. Total and spontaneous malolactic fermentation
Aging: In the racking tank so that the yeast sediments are in contact with the wine, naturally stabilizing it and increasing the olfactory complexity. The product is bottled without filtration and stabilization
Alcoholic content: 13.5%
Color: Intense ruby red
Flavor: Red cherry, bramble, blueberry, licorice, violet and tobacco
Taste: Juicy fruit and fresh acidity. Solid and granulated tannins. Medium body with a fresh and persistent finish
