The passerina DOC of the Bakán line of Cantine Torri comes from a thirty-year-old vine, in the Controguerra area, in the province of Teramo, raised in the Abruzzese pergola, at an altitude of 290 meters above sea level and magnificently exposed to the south-south / east.
A strictly manual harvest of the second decade of September of certified organic cultivation, followed by a vinification in thermo-conditioned steel vats and a subsequent refinement for a period of at least 4 months in concrete tanks, to then be bottled in total. absence of oxygen.
Color: A bright pale straw yellow with a commendable texture.
Nose: A good intensity characterized by a succession of floral and fruity notes, with a prevalence of sage, broom, peach and apricot, supported by citrus and brackish sensations.
Taste: In the glass, a growing freshness in proportion to the sapidity, balanced by a soft and appreciated softness and with a finish adequate to expectations, finely acrid and pungent.
Harvest: Born in one of the most suitable areas of Abruzzo, from an old vineyard raised in Tendone, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure. A Passerina obtained from a strictly manual harvest in mid-September of certified organic farming, which ensures maximum respect for the surrounding environment.
Vinification: A vinification carried out in thermo-conditioned steel vats followed by a 4-month refinement in concrete tanks, and then bottling in the total absence of oxygen.
Pairings: A wine to be served cold, at a maximum of 6-8 degrees with aperitifs, appetizers, seafood, vegetarian dishes, white meats and fresh or medium-aged cheeses. We imagine it with a crusted salmon, sea bass carpaccio with orange, risotto with asparagus, duck breast with balsamic vinegar.
