Pecorino Abruzzo Superiore Dop - Collecivetta

Complex and refined, this wine comes from the selection of our best pecorino bunches and is enriched in its structure thanks to the particular vinification technique, which sees it rest for a few months on the lees.

Method of Service: Leave to rest for at least 10 days after arrival. Serve at a temperature of 8 - 10 ° C.

Food Pairing: Fish dishes, cold cuts, white lasagna, risottos, poultry and aged cheeses, white meat ragù.

Production area: The vineyards extend in the Municipality of Pescosansonesco at 550 m a.s.l. within the Gran Sasso and Monti della Laga National Park. The soil is characterized by a clayey-limestone matrix, rich in organic substance, sloping, facing north-east. The summer climate is dry and well ventilated.

Characteristics of the variety: Pecorino is a native Abruzzese variety rediscovered a few years ago thanks to the recovery and selection work of a few daring winemakers. It prefers fertile soils with a high water availability. The wine is characterized by strong citrus notes and freshness in the mouth accompanied by the right body and gustatory persistence.

Vineyard: 100% Pecorino, density of 5200 vines / ha, yield of 100 q / ha, manual harvesting in crates in the last ten days of September.

Vinification: In white: crushing-destemming, soft pressing and subsequent static decantation.

Fermentation: in steel with selected yeasts at a low temperature of 14 - 16 ° C

Aging: 6 months in steel on the noble lees in steel and 3 months in the bottle.

Sensory Analysis: Straw yellow color. The bouquet explodes with hints of melon, withered yellow flowers and bread crust. The aromatic complexity is highlighted by a marked minerality, great structure and long persistence.
