Pecorino d'Abruzzo DOP - Pietra Majella
Pecorino DOP 100% with hillside vineyards located west of Miglianico, 250 meters away. above sea level, with clayey-loamy soils. The training is Guyot with eight-year-old vines, 4000 plants per hectare with a yield of 120 q.
Harvest: Exclusively by hand around mid-September. The grapes are harvested by hand, softly pressed and immediately protected from oxidation, thanks to the addition of carbon dioxide, the gas naturally released by alcoholic fermentation.
Maceration and Pressing: The must remains for about 30 minutes in contact with the skins, before carrying out the soft pressing, with quite long times in order to extract part of the tannins that contribute to the body of the wine.
Cleaning Must: The must is clarified by natural cold decantation, at 10 ° C for 24 hours.
Fermentation temperature: 14 - 16 ° C
Aging: A small portion is aged in barriques for 3 months.
Alcohol content: 13.00% Vol.
Color: intense straw yellow, with slight golden hues
Bouquet: scent of ripe fruit, warm and complex, enriched with very characteristic spicy nuances
Taste: intense body, with a good acidic, savory and enveloping shoulder; warm and balanced aftertaste
