Civitas - Pecorino Spumante Brut

Grape Variety: Pecorino is a native vine on the Adriatic side of the central Apennines (Marche and Abruzzo). The name probably derives from the shepherds who, returning from the mountain areas in September, brought their flocks to graze right on the vineyards where the fruit was in full ripeness.

In the vineyard: Raised in Abruzzo pergola with low production load on loose soils tending to calcareous.

Color: straw yellow with greenish reflections, very fine and lively perlage.

Bouquet: intense, enveloping and balanced, with notes reminiscent of green apple, wisteria, peach and acacia flowers.

Taste: rich, intense, soft and fresh on the palate.

Pairings: It is the glass of sparkling wine for any moment of the day. As an aperitif it surprisingly whets the appetite, at the table it is the pleasant combination with daily lunches characterized by light foods.
