Bakan Organic Abruzzo Pecorino Doc
With a magnificent south-south / east exposure and at an altitude of 290 meters above sea level, the Pecorino d'Abruzzo DOC of the Bakán line of Cantine Torri is born. In the Ancarano area, in the province of Teramo, in an Abruzzo pergola farm and with 100% Pecorino grapes, this wine is the result of a manual harvest of the first ten days of September, of a vine over thirty years, of certified organic farming.
The vinification is done in thermo-conditioned steel vats followed by an aging of at least 4 months in concrete tanks, and then bottled in the total absence of oxygen.
Color: In the glass a bright straw yellow with golden hues that seduces with its brilliance.
Nose: Excellent olfactory intensity that reveals fresh floral and fruity aromas, with vegetal notes of freshly cut grass. We recognize citrus, apricot, sage, lime and even some tropical fruit.
Taste: In the mouth, a pleasantly warm and attractive structure stands out, enlivened by an acid bite and a whimsical flavor in antithesis, which they balance. The taste is in perfect harmony with the sense of smell, which highlights a pleasant and persistent mineral aftertaste.
Harvest: Born in one of the most suitable areas of Abruzzo, from an old vineyard raised in Tendone, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure. A Pecorino obtained from a strictly manual harvest of the first ten days of September, of certified organic farming, which ensures the utmost respect for the surrounding environment.
Vinification: A vinification carried out in thermo-conditioned steel vats followed by a 4-month refinement, in concrete tanks, and then bottled in the total absence of oxygen.
Pairings: A wine to be served cold, at a maximum of 6-8 degrees, with aperitifs, appetizers, seafood, vegetarian dishes, white meats and fresh or medium-aged cheeses. Think of raw fish or sea kebabs tagliolini with clams and porcini mushrooms, bavette with pesto with potatoes and green beans, baked guinea fowl or a nice mixed caciotta from Abruzzo.
