Pecorino Controguerra DOC

The Pecorino grapes are harvested by hand, after a meticulous selection, in the second ten days of September according to the climatic conditions. They are de-stemmed, pressed in a very soft way; the must obtained is statically decanted and left to ferment in a stainless steel tank at a controlled temperature of 16-18 degrees centigrade. About 10% of the must ferments in barriques where it remains for 4 months in order to release a moderate “boisè” which gives it characteristics of finesse.

Origin: The vineyards are located in the municipality of Controguerra at 250 meters above sea level.

Composition of the subsoil: Medium-textured soil tending to fairly fresh clayey.

Grapes: Pecorino 100%.

Characteristics of the plants: The vineyards are trained in rows (Controspalliera) with 5. About 600 plants per hectare. Exposure is south-west.

Color: straw yellow with intense greenish reflections, lively, brilliant.

Bouquet: its bouquet is a combination of floral and fruity fragrances. Hints of exotic fruit, citrus, green apple and pear stand out.

Taste: not just volume, power, structure but aromaticity, balance, harmony. Great expression of elegance and excellent longevity.

Gastronomy: Perfect for aperitifs, fried foods, fish dishes, white meats, medium-aged cheeses.
