Very ancient white grape variety originating from Central Italy. Its name derives from the rather small size of the berries and from the fact that sparrows often peck the berries. Used in the past only in blends, Tenuta Ulisse has decided to vinify it in purity to enhance its characteristics of minerality and freshness.

It is a vivid example of Abruzzo white wines for the olfactory and gustatory suggestions it brings as a dowry. It lives in a bewitching and modern freshness. A magnificent fruit of Abruzzo winemaking.

Grape Variety: Very ancient white grape variety originating from Central Italy. It is very likely that his homeland is located towards the Adriatic coast, in Abruzzo and in the Marche. It certainly belongs to the vast Trebbiani family. Its name derives from the rather small size of the berries and from the fact that sparrows often peck the berries. It is therefore very often characterized by a strong acidity.

Vinification: Selection and placing of whole grapes in the exclusive "Ulysses" cooling tunnel and sudden lowering of the temperature with consequent cryomaceration of the skin of the skin and extraction of aromatic compounds; Destemming, pressing in an inert environment, static cold clarification; Slow fermentation at a controlled temperature of 11 ° C in thermoregulated and inertized tanks.

Organoleptic characteristics, combinations: It has a pale straw yellow with slight greenish reflections. The aromas are very intense with pleasant notes of peach, apricot and grapefruit. The floral scents are reminiscent of wisteria and lime and over time it takes on a distinctly mineral character.
