Harvest: Second decade of October with manual harvesting and selection of the bunches.
Yield per hectare: 120 quintals of grapes.
Vinification: Maceration for one hundred and twenty hours in temperature-controlled stainless steel vats at 25 ° C. After racking, complete management of the malolactic fermentation. Short passage in large barrels, just enough to give stability and greater structure to the wine.
Bottling: at least one year after the harvest, it is marketed from eighteen months after the harvest.
Color: Deep ruby red.
Characteristics: The scent is of red fruit. The taste is full, soft and round, with its rather evolved and non-astringent tannins.
Alcoholic degree: 13,5% vol.
Pairings: polenta with hare; pheasant in casserole; stewed lamb livers.
