Organic Rosé Terre di Chieti Igp
We rely exclusively on spontaneous fermentation for all our Premium organic wines: this is the result of the natural selection of the so-called "indigenous yeasts", responsible for the alcoholic fermentation of wine. The different species of yeast in the fermenting must resist the progressively accumulated ethanol in different ways.
The purity of this viticultural work of art is completed by very few interventions in the cellar and no filtration. Only organic red grapes vinified in white, exclusively spontaneous fermentation, no filtration.

Harvest period: Mid October (based on chemical analysis and grape tasting)
Vinification: The grapes from certified organic vineyards, after a short cryomaceration in the press, are subjected to soft pressing. The fermentation of the must takes place partly in steel at a controlled temperature and partly in barrels of 225 liters each of 3 ° passage of French oak and Austrian acacia with constant temperature control. Then follow the rotary-dynamic batonnage operations
Aging: In the same fermentation barrels so that the sediments of the yeasts are in continuous contact with the wine, increasing its aromatic richness
Alcoholic content: 13.5%
Color: Salmon pink of medium intensity
Flavor: Red fruit, raspberry and wild strawberry. Complex, fine and integrated smoky notes deriving from fermentation and aging in acacia barrels
Taste: Full-bodied, consistent and long aromatic persistence. Fresh acidity and well integrated into the fruit
