Cerasuolo d'Abruzzo Doc - Sunnae
It is a rosé wine made entirely from Montepulciano grapes vinified in white. The color changes every year, going from a pale pink to a decisive scarlet, based on the seasonal trend that characterizes a different degree of coloration of the skins. A pleasant freshness to the taste and a remarkable elegance in the aromas accompany the typical structure of the Montepulciano grape.
It goes well with light spring and summer dishes, but also with first courses or white meats. The grapes come from an Abruzzo awning vineyard with low yields, the harvest is brought forward to the end of September and carried out by hand. The bunches are de-stemmed, then the grapes undergo a maceration of only 6 - 8 hours, to prevent too intense coloring of the must, and finally a soft pressing. A second cold decantation follows for 18 hours, then fermentation begins at a low temperature, around 18 ° C. The wine rests in the vat on its lees until the beginning of February.
