Our activity is limited to the cultivation of a few indigenous vines, which we love to vinify in purity to try to characterize them as best we can in our territory in relation to the individual vintages.
With the name Bianchi Grilli we indicate limited productions of white wine born from our will and our pleasure to deepen and experiment, in accordance with the potential of our grapes. Crickets, so to speak, which in short, we cannot get out of our heads.
Grapes: Trebbiano Abruzzese 100%
Training system: espalier, guyot pruning Year of planting: 2008 Soil: clayey-limestone Yield per hectare: 40-50 hl / Ha Vinification: cold maceration on the skins for up to three or four days, then separation of the skins and fermentation of the must in steel and, for a small part, in acacia tonneau
Maturation: 11 months on the lees in the same fermentation vessels
Refinement: 8 months in the bottle
Alcohol: 12.5%
Serving temperature: 10-12 °
Organoleptic examination: Straw yellow with golden reflections, intense and very elegant hints of white and yellow flowers, with black locust and broom in evidence, and fresh pulp of yellow fruit, with pleasant notes of white pepper and chamomile . In the mouth, the excellent balance between acidity and softness makes the wine perfect to accompany fresh cheeses and refined preparations of boiled and raw fish. Ideal on ricotta or burrata ravioli with white sauce and Navelli saffron.
