Abruzzo Bianco Doc - Sunnae
Our goal is to bring back to its best a product like Trebbiano, which has been mistreated for years and considered a low-level white. By making significant changes in the cultivation of the vineyard, returning to the low yields per hectare of the past, limiting the vigor in new plants and operating with drastic but appropriate thinning, we have managed to significantly improve the level of ripeness of the grapes of this little aromatic but very intense.
From the first bottling (2005 vintage) to today, the wine has undergone a constant and evident evolution with a consequent increase in quality. The bunches, harvested and selected by hand, are subjected to a soft pressing followed by a cold static decantation for about 18 hours. The fermentation, carried out by selected yeasts, takes place at a constant temperature of about 18 - 20 ° C and lasts at least two weeks. After two close rackings, the wine rests in the vat on its lees until the end of January.
