Surface of the vineyard: 2.34.00 hectares.
Altitude of the vineyard: 198 meters above sea level.
Type of soil: Calcareous with the presence of clay.
Training system: Spurred cordon.
Harvest: After 20 October with manual harvesting and selection of the bunches.
Yield per hectare: 90 quintals of grapes.
Vinification: Fermentation and maceration for 21 days in stainless steel thermo-conditioned vats, managed with at least two deléstage in the middle. Malolactic fermentation and subsequent aging in 20 hl French oak barrels. Racking and bottling without filtration, with further refinement in the bottle for at least nine months before release.
Bottling: 36 months after the harvest.
Color: Intense ruby red.
Features: It manifests its aromas with considerable complexity. The nose is intriguing and enveloping. The taste opens with sensations of forest fruits and rightly balanced licorice. Pleasant tannins.
Alcoholic degree: 14,5% vol.
Pairings: turkey with chestnuts; duck with truffles; wild boar in a pan.
