Pecorino d'Abruzzo Superiore Doc - Ferzo
Ferzo is a piece of fabric sewn together with other pieces to form a large sail. The combination of the most suitable wine-growing areas in Abruzzo gives life to "Ferzo", a single large label that contains the best of the region's native vines.
Vinification: The must obtained by soft pressing of the grapes, after a brief contact with the skins at low temperature (cryo-maceration) becomes clear. In special steel tanks the clear must ferments at a controlled temperature which enhances the aromatic peculiarities of the grape.
Color: Straw yellow with greenish reflections.
Nose: Floral, with notes of acacia and balsamic hints of sage. Aromas of tropical fruit, pineapple.
Taste: Full flavor, good structure and long persistence with mineral notes.
Pairings: Ideal with all seafood cuisine: shellfish, raw fish; it also goes well with delicate starters and main courses and white meats.
