Abruzzo Spumante Bianco Brut - Charmat method
In 1895, Federico Martinotti patented his method for the second fermentation of a sparkling wine in a closed container.
Our Abruzzo Spumante Bianco Brut is born today from fermentation in an autoclave, which enhances its fruity and floral notes.
Production area: central Italy, Abruzzo, Chieti province.
Grapes: native and / or international white and red berried grapes.
Training system: espalier, “tendone” Abruzzo pergola.
Harvest period: from 10th August to 30th September.
Vinification: in white, with crushing and soft pressing of the grapes that previously remained at a low temperature for at least 8 hours.
Primary fermentation: thermodynamic control (from 14 to 17 ° C) with the use of selected yeasts.
Second fermentation: 15 - 25 days.
Refinement: 30 - 90 days on the lees.
Alcohol content: 12.5% vol.
Sugar residue: Brut
View: light straw yellow, bright, with greenish tints. Elegant, fine and persistent perlage.
Nose: floral hints of hawthorn and orange blossom; fruity pear and tropical notes, hints of pastry in the finish.
Taste: harmonious, intense, soft, persistent. The retro olfactory notes confirm the perceived olfactory expectations.
Serving temperature: 5 - 7 ° C
Food matches: excellent aperitif, very pleasant with appetizers and raw fish. Perfect for vertical medium / long-aged cheeses.
