Harvest: First ten days of September with manual harvesting and selection of the bunches.
Yield per hectare: 130 quintals of grapes.
Vinification: Careful selection of the grapes. Mashing and flotation, decanting of the clear product and inoculation. White vinification, with fermentation in the ten days following the harvest, carried out at a temperature of 13 ° C. Aging in steel at a controlled temperature.
Bottling: November following the harvest.
Characteristics: Initially it manifests its aromas with a very fine and graceful fragrant range, with excellent mineral notes. Then there are sensations of ripe summer Mediterranean fruit, which on the palate give way to honey, fresh butter and dried acacia. A vanilla nuance makes the tones more delicate. At the end they surprise perfectly balanced elegance and acidity.
Alcoholic degree: 12.5% vol.
Pairings: Timbale with fried aubergines; spinach flan with mushrooms and saffron; skewers with beef and prawns.
