Vinification: Harvested by hand, unlike normal red vinification it is not necessary to reach complete phenolic maturity, so it is better to rely on technological maturity in order to obtain the desired sugar content and the right acidity; however, it is advisable not to anticipate the moment of harvest too much to avoid obtaining herbaceous, sour and not at the most aromatic products. The grapes are vinified "in white" (without contact with the skins). The fermentation yeasts are indigenous selected from the flora of the territory and linked to its biodiversity. Fermentation is carried out at a controlled temperature. The maturation at the end of fermentation on the good lees makes it acquire complex and important tones
